Moroccan Berber Chicken Tajine with Preserved Lemons and Olives

This tajine is one of the most beloved meals in Morocco, It is also very simple to make and very healthy. Bon Appetit!

Serves 4 to 6 as a main

INGREDIENTS

  • 4 pieces of chicken ( whatever you have)
  • 3 tablespoons olive oil 
  • 1tbs ghee ( optional) 
  • 2 large onions, sliced
  • 4 garlic cloves shopped
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • Salt or to taste ( add to taste after cooking if you cook with preserved lemons. Preserved lemons are salty!
  • ¼ ground black pepper
  • 1 tsps ginger
  • 1/2 cup olives
  • Few strings of saffron ( optional )

DIRECTIONS

Step 1

In a large Dutch oven or large deep pan over medium heat add olive oil and ghee, add onions, cook for few minutes.

Step 2

Add chicken, cook for few minutes while turning on each side.

Step 3

Add spices, add lemons, add 2 cups of water , turn down heat and let cook for 30 minutes or until chicken is cooked.

Step 4

Add olives, cook for 5 minutes.

When the sauce is thick and chicken is cooked, you are done! decorate with one tablespoon of chopped parsley and enjoy! 

We usually eat this tajine with bread.
